Simple, Healthy, Minestrone Soup recipe

When at University it can sometimes be hard to cook healthy, simple meals. Home cooking may be prioritised less when going out more which can lead to unhealthy eating habits. However over the past few months I have been focusing on experimenting with healthy meals which are super easy to prepare, but can also be frozen to save cooking again! I will be doing several blog posts on many of my go to meals at university for you to try yourself. Starting with homemade minestrone soup. Fair enough you can buy this from a tin, but it is nowhere near as substantial or tasty as making it yourself. This is how it's done...

Ingredients

  • 2 diced carrots
  • 1 diced large onion
  • Cabbage- However much to preference
  • Any other vegetables you wish to include!
  • A gammon steak/bacon
  • 1 tin of chopped tomatoes
  • A stock cube (I prefer vegetable or chicken)
  • Pasta
  • Mixed herbs for flavour

Method

Begin by preparing the vegetables. You can have them any shape you want, depending how chunky you want your soup- I like to dice them. Get a large saucepan of water and bring it to boil. It is important the saucepan is large as this is what the soup will be cooked in later. Pop all the vegetables in there and leave to boil for around 7 minutes. Meanwhile, fry your gammon steak or bacon so it's cooked through and remove from the pan. Chop it up into cubes (or again the size you'd prefer.) Once the vegetables are cooked add the gammon to the pan as well as the tin of chopped tomatoes. Add a stock cube and the pasta and leave the stock to dissolve whilst continuously stirring. Add a tablespoon of mixed herbs and leave to simmer for at least 10 minutes or until the pasta is tender. That's all there is to it! The longer left to simmer the more flavoursome the soup gets, but after 10 minutes it will still be delicious! Serve alongside some crusty bread and enjoy!
